Lemon Loaf

Sharing an easy lemon loaf recipe today! When I search for recipes these days I’m going for a less is more approach and looking for simple, wholesome recipes. The lemon loaf recipe from She Loves Biscotti fits this bill and I’m sharing my final result after trying her recipe out. Spoiler, I give it five stars!

When I’m baking I’ve gotten into the habit of turning on The Great British Bake Off and just going to town. We all need an escape from bad news and worry these days and turning on a show, where a burnt piece of caramel or over-whipped cream are the biggest problems is a world that I miss!

Anywho, here are the recipe details below!

Lemon Loaf Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/2 cup unsalted butter
  • 1 1/4 cup sugar
  • 3 eggs
  • 1/2 cup lemon juice
  • 1/2 cup milk (I used oat milk and it worked fine!)

Directions

  1. Preheat your oven to 350 and grease a bread pan. Mine was 9×5.
  2. Combine all your dry goods (flour, baking powder, soda, salt). Then add in the lemon zest – the yellow flecks looks so pretty!
  3. Beat butter for two to three minutes – I used my hand held mixer and it worked just fine.
  4. Add in the sugar and continue beating the mixture.
  5. Add all three eggs, one at a time and keep beating.
  6. Add in lemon juice. Stir, but don’t over combine.
  7. Alternate between adding in bits of flour and milk, keep mixing.
  8. Pour into your baking pan and bake for 60-75 minutes.

The cake comes out with such a delicious tangy flavor and lasted only about two days in our household. The recipe suggest adding in options such as almonds or poppy seeds which I think would be lovely and so beautiful!
