Raspberries were on sale this weekend and I’ve had an old box full of matcha powder sitting at home — so it was the perfect time to make a raspberry matcha tart that I’ve been seeing on Pinterest for awhile.

This recipe comes from Hungry Rabbit – so head on over there for the directions and details. This was super easy to make – the only adjustment I made was to go out and buy a tart shell. I’ve had what I call a “functioning” cold all weekend and was busy spending time with family so didn’t have time or the energy to go all out. My focus was to explore the matcha flavor so I figured what the hey, I’ll just go to my local bakery and see if they have an empty tart shells. For $3, I was sold!

Matcha is the signature ingredient in this recipe. It’s a finely ground green tea powder renowned for its health benefits  — though I think they may be cancelled out by the other ingredients in this tart. 🙂 For me, I just like matcha’s distinct flavor, it just tastes green and fresh. Be careful as matcha is an acquired taste and not liked by all (my little sister can’t stand it), and a little goes a long way. Too much and things start to taste a little too much like leaves. If you’re curious about trying matcha before making this tart , an easy way is to order a green tea latte from Starbucks (I always get mine iced). This way you don’t have to commit to buying the powder but can still explore the flavor to make sure you like it.

The final result is a fresh spring dessert  — the best surprise about it is the layer of white chocolate at the bottom of this raspberry matcha tart. It adds a creamy richness to compliment the refreshing matcha flavor. When Ted opened the fridge he excitedly exclaimed “What’s this?!?!” before taking a piece — he’s a big fan of the “petite treats” series haha.
