Lemon Glazed Earl Grey Tea Bread

I was inspired by my latest trip to England (posts 2 coming soon!) and tried out this Lemon Glazed Earl Grey Tea bread a few weekends ago. It was delicious!

I used this recipe from the Good Housekeeping website since I thought the lemon would be a sweet addition to the earl grey. I either take my earl grey with milk and honey, or just lemon depending on my mood so I knew the lemon would be a good complimentary flavor for the bread.

Read below for the recipe details and my baking lessons learned.

Directions

  1. Pre-heat your oven to 375 F
  2. Finely grind the earl grey tea leaves and sugar in a food processor.
  3. In a separate bowl mix the flour, baking soda, and salt. Whisk everything to combine well.
  4. In a bowl beat the room temperature butter and tea-sugar mix together. The official recipe says to use a mixer, but I didn’t have one and used a hand held one which worked just fine.
  5. Once the butter and tea-sugar have been mixed add in the eggs (one by one) and vanilla.
  6. Lower the speed of your mixer and slowly add in the flour and then sour cream until everything is combined. The batter smells so good and the little specks of earl grey tea leaves are quite pretty.
  7. Add the batter to a buttered pan and bake for one hour and twenty minutes. When finished let it cool completely.
  8. When the bread is cooling combine the lemon peel, sugar, and water until smooth. It’s so pretty with the lemon peel in there and then drizzle over the bread and let it set.
  9. The bread lasts for about three days before it gets dry. I think it dries out quicker than other bread’s I’ve made because of the absorbent tea leaves, so its best enjoyed fresh!
